Easy Homemade Ramen Recipe with Mushrooms and Carrots

If you're looking for a comforting and delicious meal at home, you can try this simple recipe for ramen. You'll need the following ingredients:

  • 2 packs of ramen noodles, any flavor you like
  • 4 cups of chicken broth, preferably low-sodium
  • 1 cup of sliced mushrooms, such as shiitake or cremini
  • 1 cup of sliced carrots, peeled and cut into matchsticks
  • 2 cloves of garlic, minced
  • 1 tbsp of grated ginger, fresh or frozen
  • 1/4 cup of soy sauce, preferably reduced-sodium
  • 2 tbsp of vegetable oil, such as canola or sunflower
  • 2 boiled eggs, peeled and halved
  • 2 green onions, chopped, both white and green parts
  • 1/4 cup of cilantro leaves, chopped

To make the ramen, follow these instructions:

  1. In a large pot, heat the vegetable oil over medium heat until shimmering.
  2. Add the minced garlic and grated ginger and cook for 1-2 minutes, stirring constantly, until fragrant but not browned.
  3. Add the sliced mushrooms and carrots and cook for 5-7 minutes, stirring occasionally, until tender and lightly browned.
  4. Add the chicken broth and soy sauce to the pot and boil over high heat.
  5. Add the ramen noodles to the pot and cook for 3-4 minutes, or according to package instructions, until tender but still slightly chewy.
  6. Remove the pot from the heat and divide the noodles and broth into two large bowls.
  7. Top each bowl with half a boiled egg, chopped green onions, and cilantro leaves.
